Chef spotlight: Mohammad Shafiq Akram
Inspired to become a chef thanks to his love of cooking shows, Akram always had a desire to produce British and American dishes. Working for Rotana for more than six years, his philosophy is to use fresh produce, classic recipes and to cook with heart and passion.
Start off right:
“The Grilled Octopus is one of the most unique starters at the restaurant and is definitely a firm favourite among diners. It is smoked in a charcoal josper oven and is served with pepper aioli, bell peppers and caper sauce. It is loved by guests because of the smoky flavour and sweet and sour taste of sauce. This is definitely a must-try dish."
The main attraction:
Freshly sourced every single day, the Atlantic salmon is cooked in a josper oven, which gives the fish an extra smoky taste and crispness. We serve it with celeriac puree and tomatoes but we are flexible, so if guests want to change the side dish, they have a range of options. But the sheer freshness of the salmon – which is also extremely healthy – makes this is a fantastic dish at any time of the day.
The big finish: Chocolate torte
This is a true gem on our menu as who doesn't love a dish full of indulgent chocolate. Warmed in an oven and served with vanilla ice cream and dusted with icing sugar, the combination is absolutely mouthwatering and it is the perfect dish to finish your meal. The warmness of the chocolate and the chilled ice cream is just perfection.
