
What's the first thing you do when you arrive?
The first thing I do when I arrive is to go and collect my uniform, get changed, wash my hands and then go and check my emails.
Which areas do you check on a daily basis?
Every day I go through all the fridges to check on labeling, cleanliness and for any expired items. I will also check all contact points for cleanliness.
How do you engage with your team on a daily basis?
We have team briefings daily at 4pm where we discuss any issues and the action plan for the night ahead. We also have one on one meetings with all the chefs once a month.
What is your favourite part or favorite time of day?
My favorite part of the day is when we are getting towards the end of a busy service and you can see all the guests have had a great time and we have done our jobs well.
What's the last thing you do before you leave?
The last thing I do before I leave is to write a daily report highlighting anything of importance that had happened during the day. Then I return to the kitchen and thank any of the chefs still on duty, I always show appreciation for all their hard work.
