For those who’ve cooked fish with parchment paper before, the technique used in Nori Salmon at Teatrowon’t come as a surprise.
Nori, the nutritious sea vegetable otherwise used in sushi is used to wrap succulent Atlantic salmon; sealing in moisture and keeping the fish juicy and flavourful. Once cooked, a traditional marinade of miso-ponzu is drizzled to add a distinct citrus note to the dish. On the side, a hint of wasabi is added to delicately pureed potatoes to bring a contrast in taste.
Chef's tip: The best ponzu for the marinade is one that doesn't have Soy sauce mixed in it.
