Recipe:
3200grams of Veal Loin Chilled Dutch
500grams of Lettuce Rucola
200grams of Tomato Cherry on Vine
100grams of Cheese Grano Padano
2000grams of Potato New
20ml of Vinegar Balsamic Reduction
200ml of Olive Oil
20grams of Rosemary Cyprus
20grams of Thyme Cyprus
20grams of Sage Cyprus
50grams of Salt
50grams of Pepper Corn Black
1) Grill the veal sirloin at the preferred cooking point.
2) Roast the new potatoes with herbs, extra virgin olive oil, salt and pepper. Bake in the oven at 200C for 20 minutes.
3) Marinate the rucola salad and the cherry tomatoes with the extra virgin olive oil, salt and pepper.
4) Cut into thin slices the veal sirloin, adjust it to the plate, serve with the salad, the Grana Padano cheese shavings and finish with the balsamic reduction.
