Not just your ordinary chef, Chef Roy’s unique passion for cooking extended into the theatrics and art of live cooking (teppanyaki). Through the guidance of his mother from an early age, he learnt how to make her best recipe, kare-kare, which was the starting point of him discovering his love for cooking and the experimenting of different ingredients involved. He soon attended culinary university, where he was amazed at every professor’s demo where a dish was made and beautifully plated, leading to him constantly practicing different techniques in doing so. He was also intrigued when travelling to Japan and observing how a fish was filleted and sliced there, leading to him enjoying doing the same.

In 2001, Chef Roy joined Benihana Dubai, where one of the corporate chefs there served as his mentor and provided him with an opportunity to expand upon his skills and creativity. Eventually, he relocated to Benihana at Beach Rotana Abu Dhabi, where he is currently a hibachi chef there. He constantly feels connected to each and every guest not only when they watch his dazzling and theatrical live cooking, acrobatic tricks, and funny jokes at the Chef’s Table, but also when they smile after tasting his mouth-watering artistic creations afterwards. He has also stated that cooking the chef’s special sushi roll expresses his greatest emotional passion due to the artistic experimenting that is involved in creating it.
