Chef Antonio’s lifetime talent for cooking began as far back as growing up with his mother and grandmother in Sicily, Italy. The flavours and smells of home cooked food are imprinted into his mind today, especially his grandmother’s maccheroni al sugo di carne and his mother’s pasta al forno. When he turned 10 years old, Chef Antonio began making pasta using spokes and sending wood to a nearby pizzeria and placing them under the oven. He quickly discovered his passion and attended culinary school and was recruited by his mentor during the summer season to gain professional experience. Ultimately left Sicily to be a chef in London where he quickly learnt and understood different approaches to rhythmic cooking. He proudly brings his authentic Italian cooking to Prego’s at Beach Rotana Abu Dhabi and while he always considers tomato pasta to be the king of all pastas, he is always most emotionally rewarded by cooking any dish that makes a customer smile and willing to return.
