First collaboration between Rotana and 3 Michelin starred Chef Juan Amador in the Middle East promises an intriguing and unconventional dining experience in the UAE capital.
Opened in February 2012, Amador Restaurant and Cellar is a brand new contemporary dining destination and the latest addition to the 5-star food and beverage offerings of Park Rotana Abu Dhabi, and has immediately become its flagship outlet.
The venue has been conceptualised and created in collaboration with 3-Michelin starred German chef of Spanish origin Juan Amador and offers two dynamic experiences to discover his Spanish-influenced avant-garde cuisine, suiting every mood.
Amador Restaurant brings you fine dining settings to savour Chef Amador’s culinary creations. The restaurant's menu is designed to offer exciting choices to the guests including a sampling set menu and an a la carte option. It explores and combines the tastes, colours, aromas and textures of various ingredients through scientifically precise recipes and culinary techniques, creating inventive dishes designed to spark conversation and linger in memory.
Becoming one of the city’s favourite social destinations Amador Cellar serves imaginative tapas of Chef Amador accompanied by extensive selection of fine beverages in a more casual and relaxed ambience featuring an elegant open bar together with cozy booth seating.

Located on the hotel’s Mezzanine level, Amador Restaurant and Cellar also has 2 private dining rooms and an outdoor terrace.

One of the outstanding representatives of avant-garde cuisine, in the company of chefs such as Ferran Adria, Homaro Cantu and Heston Blumenthal, Chef Amador is known for crafting each of his dishes with an almost scientific precision. “My food should stay in people’s minds,” is how he describes his approach. Dining in his restaurant is all about the live interaction between the elements of the meal which are meant to spark surprise and conversation.
The preparation techniques are complex and may appear dramatic, but Chef Amador maintains they are not meant for the sake of pure provocation – each step is aimed at perfecting the texture, aroma and flavours of the ingredients used in the creation of each dish.
Chef Amador’s avant-garde cuisine welcomes all types of influences as long as they enrich his palette and fire his imagination. His Spanish roots inspire him to create original tapas, Asian touches are obvious in the purity of his dishes, and French cuisine – “the mother of all cuisines” – is still his favourite mentor.

Amador Restaurant and Cellar will combine the characteristics of Chef Amador’s existing cuisine with what he has learned about local tastes, products and ingredients on his previous visits to Abu Dhabi. Creations on the menu include the intriguingly named Virtual Sushi, Egg Surprise and Mieral Pigeon with Purple Curry.
The restaurant is Chef Amador’s first foray into the Middle East, following his highly lauded Restaurant Amador in Mannheim, Atelier Amador in Frankfurt and Amador Suite – a one-room hotel in Frankfurt-Fechenheim, Germany – as well as Heritage, his restaurant in Bucharest, Romania.
The restaurant has been designed in a modern and vibrant style, and the interiors feature a rich mix of fabrics, sculpted glass and copper elements that work together to create a warm and relaxed ambiance.

Tasting menu is available until 10:30pm a la carte menu is served until 11:30pm.
